White pepper is made up only of the inner seed after the pericarp has been soaked and rubbed off or decorticated after drying. Rub off the pepper's outer, shrunken skin to reveal the dried, grayish-white pepper inside. Pepper's anti-oxidant qualities would encourage the flow of blood and oxygen to the skin, giving it a more energizing and youthful appearance. When added to the dishes, it imparts a tangy, spicy flavor. White pepper has a robust scent and a harsh flavor.
